Dad's Chili

1 lb Hamburger, browned

1 pkg Chili-O Powder

2 cans Mrs Grimes Chili Beans in Sauce

1 qt Tomatoes, crushed

  1. In a large pot brown hamburger, drain

  2. Crush canned tomatoes with a fork. These can be home canned tomatoes or store bought

  3. To browned meat add all ingredients

  4. Simmer

This simple recipe is sure to please. You can customize to your liking. Add 'hot' chili powder to spice it up. Top with your favorite chili toppings: cheese, sour cream, crackers, or so many other options.

This recipe is best if made the night before and has time to flavor through over night. Or if you don't have time for that, know that the leftovers are going to be even better the next time, that is if you are lucky enough to have leftovers!

Cast Iron Corn Bread

1 1/4 C Cornmeal

3/4 C Flour

1/4 C Sugar

1 t Salt

2 t Baking Powder

1/2 t Baking Soda

3/4 C Whole Milk

1 C Buttermilk

8 T Unsalted Butter, melted

  1. Preheat oven to 425˚ and place 9" cast iron skillet inside to heat with oven

  2. While oven heats, in a large bowl, whisk together all dry ingredients

  3. Add buttermilk, milk, and eggs; whisk

  4. Whisk in all but 1T of melted butter, reserve 1T for coating the cast iron skillet

  5. Once oven is to temperature, remove cast iron skillet and coat bottom and sides with 1T butter

  6. Reduce oven temperature to 375˚

  7. Pour in batter to cast iron skillet, place skillet in the center of the baking rack of oven

  8. Bake for 20-25 minutes or until a toothpick comes out clean of center of cornbread

  9. Allow to cool 10-15 minutes before serving

Usually cinnamon rolls accompany my chili but this is a great alternative. Top with butter or make it sweet by drizzling honey before serving. This just tastes so much better coming out of a cast iron skillet!


Taco Soup

2 Large chicken breast

1/2 onion, chopped

1 envelope ranch dressing mix

1 envelope taco seasoning mix

1 can whole kernel corn

1 can chili beans

1 can kidney beans

1 can black beans

1 can diced tomatoes with green chilies (Rotel)

38 oz. chicken broth

**16 oz. sour cream

**Colby Jack Cheese

**Corn chips

  1. Combine in crock pot and cook on low for 4-5 hours.

  2. Shred chicken and put back in soup;

  3. Add 16 oz. sour cream and cook an additional 30 minutes.

  4. Serve with corn chips and shredded cheese.

This recipe is my all-time favorite soup. You can also cook it on the stove to get done in about 40 minutes. If doing it that way, cut up chicken and brown with onions and then add the rest. And right at the end add in the sour cream.


Cheese Tortellini Soup with Italian Sausage & Spinach

1 - 19 oz. bag of frozen tortellini

1 lb. sausage

1 bag fresh spinach

2 cans Italian style diced tomatoes

1 - 32 oz. chicken broth

1 - 8 oz. brick of cream cheese

  1. Brown sausage in large pot.

  2. Add rest of ingredients to the pot and cook for 20 minutes or until hot, on medium heat.

This recipe is a great one pot wonder meal, and the whole family will enjoy. It is also easily made in a crock pot. Add all the ingredients to the crock pot and cook all day long and have supper ready when you arrive home.
